1. Cut the broccoli into bite-sized florets. Bring a large pot of salted water to a boil, then blanch the broccoli for 2–3 minutes until bright green and crisp-tender. Immediately transfer the broccoli to an ice bath to stop the cooking process, then drain well and set aside.
2. Pat the chicken thighs dry and season both sides with avocado oil, paprika, and a lemon herb seasoning. Heat a large skillet over medium-high heat and pan-sear the chicken for 5–7 minutes per side, or until the internal temperature reaches 165°F (74°C). Remove from the skillet and let the chicken rest for 5 minutes before slicing or dicing.
3. While the chicken rests, shred the carrots using a cheese grater, chop the purple onion, and halve the tri-color cherry tomatoes.
4. In a large mixing bowl, combine the blanched broccoli, shredded carrots, chopped purple onion, tri-color tomatoes, shaved or shredded Parmesan cheese, and croutons.
5. Add the sliced or diced chicken to the bowl and pour in the creamy Caesar dressing. Toss everything together until the salad is evenly coated.
6. Taste and adjust the dressing or seasoning if desired. Garnish with additional Parmesan cheese and freshly cracked black pepper before serving.
7. Serve immediately for the freshest texture, or refrigerate for 15–20 minutes before serving to allow the flavors to meld.
