Crunchy Kale Shrimp Salad

Massaging the kale with olive oil helps soften the texture and makes the salad more flavorful and easier to eat.

1. Add chopped kale to a large bowl. Drizzle with olive oil and massage for 2–3 minutes until softened.
2. Add shredded cabbage and all salad seasonings. Toss well to combine.
3. In a small bowl, whisk together avocado oil, apple cider vinegar, and maple syrup to make the dressing. Set aside.
4. Heat a pan over medium heat with a little oil. Add shrimp and season with lemon butter herb seasoning, paprika, and garlic herb seasoning.
5. Cook shrimp for 2–3 minutes per side, until pink and fully cooked.
6. Transfer salad mixture to a serving bowl and top with cooked shrimp.
7. Drizzle dressing over the salad before serving. Toss lightly if desired.
